Omakase Experience
Discover Canada’s first fully plant-based, traditionally styled sushi omakase—an intimate, immersive dining journey offered only at COFU Chinatown. Our 18-course omakase is a culinary performance with just 8 seats per seating, served across our counter, handcrafted by Japanese carpenters. Each course is thoughtfully prepared and presented by our kitchen team and chef, blending traditional Japanese techniques with plant-based innovation to unleash the full potential of seasonal vegetables.
The experience begins with a progression of five appetizers (前菜) to awaken your palate, followed by eight sushi courses (寿司) including one optional handroll upgrade. Two wrap-up dishes (締め) lead to a sweet finale of two desserts (水菓子). A thoughtful take-home gift (手土産) concludes the experience, offering one final expression of hospitality. The full experience unfolds over approximately 90 to 120 minutes.

What Sets Us Apart
From January, guests will enjoy our Winter Menu, celebrating seasonal produce and warm, earthy flavours. Many components are made over the course of several days—some dishes take up to three days to craft. All items are prepared in-house, using carefully sourced local ingredients and select imports from Japan. Our dishware and plating are equally intentional: each piece is personally selected and imported from Japan by our founder, Akiko Gulkison, to complement the look, feel, and spirit of every dish.
